We here at Persona Wood Fired Pizzeria are very proud to use only the finest Italian imported “00” or dopio zero flour.Most chefs and pizza experts would agree that “00” flour is the best flour for making pizza. But why? I’m so glad you asked! Let me explain.
The word pizza first appeared in Italy in 997 AD in Gaeta, Italy. Pizza came to mean bread with toppings. It wasn’t until 1904 in an article in the Boston Journal that the word pizza was printed in the United States. Since then, a lot has changed. However, the original meaning still rings true.
Everyday at Persona we are asked “Do you have slices?” And if you are one of the people reading this entry who has asked that question you have invariably heard our response. “No, we don’t serve slices. Rather, it is a fresh baked personal pizza that is about the size of two slices”. More often than not, the “fresh baked” portion of the answer wins over the guest and we have sold another pizza.

When a Chef looks for quality ingredients for any of their culinary creations the first place they go is to their local farmers, fisheries and ranchers. Go Local is the battle cry for almost everyone that is looking for sustainable ingredients close to home and for many good reasons, but what about those diamonds in the rough the ingredients that you just HAVE TO HAVE! what if they are not exactly “local”?
Its time to start creating new fall menu changes in our restaurant and as the fresh ingredients that are available all summer long begin to change with the seasons so do the palate’s of your guests. Everyone is talking about Kale! grilled or sauté it is a great topping on a wood fired Bianca pizza with prosciutto! so use your imagination and think “comfort food”.
